This expression from Found North is part of their “High Altitude Collection” and showcases a masterful blend of aged Canadian grain whiskies finished with an innovative cask regimen. The “Goldfinch” release brings together components aged from 15–22 years and is bottled at cask strength (58.1% ABV ≈ 116.2 proof) with no chill-filtration and natural colour.
The blend is predominantly corn whisky (91% corn, 8% rye, 1% malted barley) with finishing in Sauternes barriques (two-thirds of the blend), Cognac casks and air-dried heavy toast new American oak.

Appearance: Rich golden colour, hint of deep amber tones from the long ageing and finishing.

Nose: Vanilla bean, caramel, golden raisin, pear and light citrus, with touches of baking spice and creamy texture.

Palate: Oily and full-bodied. Flavours of butterscotch, honeyed corn sweetness, vanilla custard, orchard fruit (pear/apricot), and underlying oak spice (cinnamon, clove) from rye component.

Finish: Long, warm and smooth — lingering vanilla, caramelised sugar, light pepper or rye-spice echo, and a refined dryness from new oak.
