We focus on using only one type of sake rice, Yamada Nishiki, and making only the type of sake, Junmai Daiginjo, that we believe is delicious, rather than making various types of sake with different kinds of rice. This sake, made with Yamada Nishiki polished to 50%, has a glamorous aroma and sweetness, a soft flavor, and at the same time, a solid body.
