Aroma Aromas of toasted oak, dried apricot / stone fruit, baking spices, vanilla. You might also pick up a subtle “grape” or “grapey” richness from the Cognac cask. There’s caramel and dark cocoa or chocolate underlying it all. Flavor Medium body. Flavors of sweet vanilla and caramel, plus fruit from the Cognac finish (plum, apricot, maybe cherries), toffee, dark fruit, possibly banana foster or orange zest. Also the rye spice of the bourbon base shows (pepper, maybe a touch of oak spice). Finish Long & warming. The Cognac‐derived sweetness lingers, along with oak, spice, and fruit. Slight leather or fig might appear, plus residual vanilla or caramel. The finish may dry a little toward the end with oak tannins.
